If you’ve been to Cane & Grain (& if you haven’t, why not?) you may or may not have realised that they have a hidden bar on the first floor, only accessible via a secret door behind the host. Whether you’ve found it or not, you’re going to want to discover it as Cane & Grain rebrand this first floor and make good times and chemistry collide at Science & Industry.

The bar is aptly named as Science & Industry will feature its own back room laboratory where the team, headed up by our favourite Italian, Massimo Zitti, will cook up cutting-edge cocktail creations, pushing the boundaries of molecular mixology.

The hidden bar, features new Manchester inspired worker bee wallpaper alongside ornate lighting fixtures (they’ve kept the squirrels!) and custom made upholstery.

Gatekeeper to the lab is master mixologist, bar manager and chief trainer for The Liars Group, Massimo Zitti. The lab has led to the creation of a number of innovative cocktail creations, including Massi’s famous edible perfumes which he sprays onto the rims of glasses. The team has even been holding regular workshops with the University of Manchester chemistry department where they have been learning the finer details of distillation, filtration and crystallisation.

In the past year or so we’ve really been focusing on the science behind cocktail creation. Our lab means we can experiment and really play around with flavours to create a sensory experience for the customer. It makes perfect sense to call the bar Science & Industry. Science & Industry won’t just be about the drinks – it will also offer live music too. Expect loads of blues – the very best accompaniment to the finest drinks Manchester has to offer!” ~ Massimo Zitti

Our first floor bar has become such a well-loved part of the venue that we felt it deserved its own identity. Massi has been working away in the Lab for months now and has produced some incredible flavours and aromas which we are confident will make our drinks stand out above the rest.
